Ingredients:
Salad:
- 1 head of broccoli, chopped
- 1/8 of a red onion, diced
- 2 tbsp dried cranberries
- 40g reduced fat, Feta cheese
- 1 tbsp fresh dill, chopped
- 1 tbsp flat leaf parsley, chopped
Dressing:
- 50g natural fat free yoghurt
- 1 tsp onion powder
- 1 tbsp fat free mayonnaise
- 1 tsp sugar free maple syrup
- 1 tbsp apple cider vinegar
- ½ tsp Dijon mustard
- ½ garlic clove, crushed
- Salt & Pepper to taste
Method:
- Lightly steam broccoli for 1-2 minutes until just tender.
- Add steamed broccoli, onion, cranberries, feta, dill and parsley to a bowl and set aside.
- Make the dressing by whisking all ingredients together, then pour dressing over the salad and toss to combine. Season with salt and pepper to taste.
